The David E Pennsylvania Straight Bourbon Whiskey ($44.99) from Hidden Stills celebrates Pennsylvania’s storied history in distilling. My first presentation of this bourbon made me realize this spirit is a narrative waiting to be sipped and thoroughly enjoyed.
Boasting an alcohol-by-volume rating (ABV) of 45.5%, it’s crafted from a mash bill of 70% corn, 20% rye, and 10% malted barley. Aged gracefully for three years in a 53-gallon Kelvin Cooperage Barrel, its color, reminiscent of burnt amber, beckons the curious and seasoned whiskey enthusiasts alike. The batch number, bottle date, and bottle number is written by hand on each bottle.
Founded in 2014 in Lebanon, PA, Hidden Stills distillery embarked on a mission to become the epitome of Pennsylvania craft straight bourbon whiskey. Their David E Bourbon Whiskey (named after the founder and president, David E. Stein) epitomizes this essence, thanks to an unwavering commitment to grain-to-glass processes and premium quality.

On the nose, a whiff reveals a symphony of vanilla intertwined with the aroma of freshly brewed coffee and the spicy allure of ground cinnamon. It unfolds its layers on the palate, presenting the sweetness of caramel, the warmth of cinnamon, and the earthiness of dry oak. But it’s the slight mint aftertaste that surprises and delights. As it goes down, the finish leaves an impressionable trail of smoke and tobacco, a gentle nod to its matured character.
